We have been very lucky to be invited to take part in the wonderful Happy Feaster Blog Tour by Ladybird Books and The Happy Foodie. For our part of the tour, we have been inspired by the tales of Peter Rabbit to create yummy Mr McGregor’s Mud Carrot Cake Cupcakes. We were asked as a collective of bloggers to bring storytelling from the page to the kitchen by creating springtime Easy Recipes inspired by the tales of Beatrix Potter!
Have you ever wanted to make a special little cupcake? one that is inspired by a great writer, who has capture nations with her wonderful and unique style? Then here is a Carrot Cake CupCake Recipe that the one and only Peter Rabbit has inspired me to make!
Beatrix Potter stories have always been a personal favourite of mine. Endless hours were spent by my mother reading bedtimes stories to me and my sisters each and every night before we snuggled up contented to go to sleep. I loved how Peter Rabbit was a little mischievous and how all of the characters would ignite my imagination as I can only imagine they would have a very similar effect on children all over the world, dreaming of The Tales of Peter the Rabbit.
Beatrix Potter wrote and Illustrated each and every page of the books, bringing the characters to life and creating timeless classic’s along the way.
The following recipe was inspired by Beatrix Potter, these glorious tasting Carrot Cake Cupcakes with a Potter twist will have you and your children wanting more. Each Cake has a lovely handmade edible Carrot and delightful tasting dark chocolate topping to recreate the look of Mr McGregor’s Gardens.
McGregor’s Mud Carrot Cake CupCakes Recipe.
{Adapted from Tesco Recipe.}
I started my Cake Carrot CupCakes recipe by preheating the oven to 180°C.
McGregor’s Mud Carrot Cake CupCakes Ingredients
3 Medium Carrots, peeled and grated.
100g soft light brown sugar.
80g unsalted butter, allow to soften
80g Golden Syrup
2 Medium sized Eggs
150g self-raising flour
½ teaspoon bicarbonate soda
pinch of salt
Icing
50g unsalted butter, softened
110g low-fat cream cheese
225g icing sugar
1 teaspoon vanilla extract
Renshaw Ready To Roll Icing Lincoln Green from Hobbycraft.Dark Chocolate or milk chocolate grated to make the mud topping.
Cooking utensils Required
1 Pan
1 Set of weighing scales
1 Bowl for mixing
1 Electric Whisk and 1 teaspoon. Start your Carrot Cake CupCakes Recipe by mixing and combining the butter, sugar and golden syrup in a pan melting the ingredients together over a mid range heat. Continue to stir your until all has fused. Take your pan from the hob and add whilst stirring the self-raising flour, a pinch of salt, bicarbonate of soda, ground cinnamon. Then add your carrots which should already be grated into the delightful mix. Continue to stir until you have a very thick and smooth looking batter.
Distribute the mix evenly into each of your Carrot Cake CupCake cases and place them straight into the already preheated oven. Cook on the middle shelf for around 20 to 25 minutes.
Whilst you are awaiting the Carrot Cake CupCakes are cooling, prepare the icing. Start by combining the unsalted butter, cream cheese, icing sugar and don’t forget to add the vanilla extract all in a large mixing bowl. Using the electric whisk mix the ingredients until you have no lumps and the mixture is super smooth.
Once your Carrot Cake CupCakes have cooled either use a table spoon to spread your icing or use a piping bag fitted with a star-shaped nozzle.
Make your Carrots from the ready made coloured icing and grate your chocolate into a bowl. Decorate your McGregor’s Mud Carrot Cake CupCakes and make your buns look good enough for Peter Rabbit to eat.
